1. Now the shrimp and vermicelli were softened with warm water, shrimp, filtered out, vermicelli into the boiling water in the boiling water, and then cut into short sections.
2. leek cleaned and filtered, chopped, egg beaten well fried and mashed to cool.
3. leeks, broken eggs, shrimp, vermicelli, add the right amount of salt and sesame oil and mix well together as a filling.
4. Wrap the leek box rolls like spring rolls, slightly flatten the package for frying. (Wrapped into a cylinder suitable for frying, but not good fried) sealing can be made with egg whites + cornstarch + water into a paste.
5. pan on medium heat, add a layer of oil, leek box rolls into the frying with low heat, generally a pot can fry 4-6.
6. When frying the first side, add a lid to the pan so that the frying surface does not dry out.
7. Fry the first side for about 2 minutes, then flip. If the pan is too dry, add more oil.
8. Fry the second side for another 2 minutes and it's almost ready. Freshly fried leek box rolls have a crispy skin.
Note: The frying time is slightly adjusted according to the thickness of the leek box rolls. The one I wrapped was about 1cm thick.
Tip: If you make a lot and have leftovers, when you want to eat it for the second meal, you can turn it in the microwave oven for 15-20 seconds and then bake it inside the Toaster Oh Toaster
for 30-60 seconds so that it can be crunchy without drying out.
