Hucho's head is flat, with a sharp snout, a big mouth crack and tiny scales. The head of the salmon is a little sharp, the kiss is blunt, the mouth is small, it is transverse, it is inferior, the tongue is thick and free, the maxilla is obvious, and there are a row of sharp teeth on the maxilla, mandible, plough bone and palate bone.

Hucho taimen is an extremely precious large carnivorous and fierce fish, which lives in low temperature (below 15℃) and fast-flowing streams for most of the year. In winter, due to the influence of water level, it gradually moves to the river or nearby deep water before freezing, looking for a place suitable for wintering. Salmon is a cold-water fish, which mostly lives in running water with low water temperature and clear water quality.
