Method

First cut the fish fillets into pieces, then dip them in rice wine and cornstarch and marinate them.

Put the fish into a frying pan. If you don’t have a frying pan, you can lightly scald it with boiling water. In a separate oil pan, add ginger, buckwheat (scallion segments or green onions) and stir-fry briefly, then add the fried (scalded) fish and stir-fry quickly over high heat.

Add some soy sauce, sugar, seasonings, and a little water before closing the pot.
