It is cold in winter in the south, and there is no heating at home. It gets cold as soon as it comes up. Eating hot pot in the New Year is the choice of many families. Hot pot is not only delicious, but also free to choose your favorite ingredients to satisfy the taste of the whole family. Because there are children at home, I eat hot pot during the New Year. This soup pot for stewing chicken ribs is the most suitable choice.
Exercise:
Chop the ribs into small pieces, chop the chicken into small pieces, blanch in a pot with cold water, add ginger slices and onion knots, and cook the wine to remove the fishy smell;
Blanch, remove, put in a saucepan or time-saving pressure cooker, add ginger slices and water to stew.
Pour the cooked soup and meat into a hot pot, add salt, pepper and chicken essence to taste, and add onion, mushrooms and corn to taste. If there is bacon at home, you can add a few pieces of bacon to cook together, so that the taste of the hot pot is richer, so that a pot of soup can be eaten as a hot pot.
Seasoning: It is more important to eat clear soup and hot pot. Prepare minced garlic, chopped green onion, millet pepper, chopped coriander, sesame sauce, soy sauce, balsamic vinegar, fermented bean curd, sesame oil, pepper oil, Chili sauce, etc. These are all condiments that are always available at home.
With the side dishes of hot pot, you can prepare some vegetables. Douban and chrysanthemum are leafy vegetables, baby vegetables, Flammulina velutipes, thousands of shredded silk, and meat dishes. You can prepare some fresh shrimp, fat beef rolls and fat sheep rolls.
Second, steamed bacon
Hunan people love to eat bacon, and this kind of steamed bacon is absolutely indispensable for Chinese New Year. Our bacon includes bacon, sausage, preserved fish, preserved duck and preserved chicken. Generally, except for preserved fish, everything can be steamed directly. The best way to eat bacon is to steam it directly, so the original flavor is the best.
Practice: Wash bacon, sausage, duck and chicken with warm water, then steam them in a pot for half an hour, then steam them into thin slices and put them on a plate.
Third, steamed bass.
Fish is an essential dish at the annual New Year's Eve dinner. All common fish personally think that perch is the best. Fish is tender but not fishy, with high cost performance. It may increase slightly during the Chinese New Year. This is a dish suitable for all ages. Although Hunan people love spicy food, this steamed fish is also an indispensable dish at the banquet.
Exercise:
After handling the fresh perch, put knife flowers on the back and a little salt on the body for a while. If you are afraid of fishy smell, you can add a little cooking wine to marinate.
Put the sliced onion and ginger on the bottom of the plate, put the fish on it, and put a little onion and ginger on it and the fish mouth to remove the fishy smell.
Steam in hot water for 8- 10 minutes, pour out the steamed juice, pick up the onions and ginger, and then pour in the steamed fish and soy sauce.

Steamed fish is best put at the end, and it is more delicious when it is hot.
Braised pork knuckle
The big pig's trotters taste the most Chinese New Year's atmosphere, soft and glutinous, and eat a lot of meat to celebrate this year's harvest. This braised trotters is a must for our New Year's Eve dinner.
Exercise:
Chop pig's trotters, put them in cold water, add ginger slices, onion knots and cooking wine, boil them with strong fire and blanch them to remove fishy smell.
Put oil in a hot pan, stir-fry the crystal sugar until it melts, and wrap the trotters with sugar after stir-frying.
Add salt, light soy sauce, light soy sauce, light soy sauce, dried Chili, ginger slices, star anise and fragrant leaves, and stir well.
After boiling in hot water, simmer for 2 hours or press in a pressure cooker for 20 minutes.
After stewing, the juice is collected by fire.
Five, stewed duck
When I was a child, I ate pork, chickens, ducks and geese at home during the Spring Festival. Goose tastes terrible now, but ducks are still indispensable. There are many ways to cook ducks, such as blood duck and beer duck, which are all eaten as meals. However, it is more atmospheric to eat ducks in the New Year. You can stew the whole duck, then chop it up and dip it in the sauce.
Exercise:
The ducks raised by the best buyers taste better; Handle the washed ducks, don't chop them up.
Put the oil in the pot, heat the ginger slices, and stir-fry the whole duck to make the skin oily.
Add star anise, dried galangal, fragrant leaves and dried capsicum, and add water to boil.
Stew the duck in the pot until the meat is soft and rotten and tastes better.
After stewing, let it cool, chop it into small pieces and eat it directly with the dip in the hot pot.
Six, pearl ball
Glutinous rice pearl pills are delicious and can be directly used as staple food. You can't miss this kind of food when you are young.
Exercise:
Add chopped lotus root or water chestnut, salt, pepper, allspice powder, chicken essence, onion, egg and starch, and stir in one direction.
Add a small amount of onion and Jiang Shui in three times and stir until the juice is completely absorbed. When the meat foam is thick, you can hang it.
After washing the glutinous rice soaked overnight in advance, squeeze the meatballs out of the tiger's mouth and evenly wrap them with glutinous rice.
Steam with hot water for about 10 minute.
Seven, cold salad
Cold salad is a greasy dish on New Year's Eve. It seems inconspicuous, but it is actually very important. With a hot and sour appetizer, you can eat more meat and drink more. There are many cold dishes, such as cucumber, preserved eggs, thousand slices, fungus, yuba and so on. They are all suitable for cold dishes and can also be matched in many ways.
Exercise:
Auricularia auricula and yuba are soaked in advance for use, and cucumber is flattened and cut into small pieces.
Blanch yuba and auricularia auricula in a pot 1 min, and then let the boiling water cool for a while.
Put cucumber, fungus and yuba together, add minced garlic, millet pepper, oil pepper, a little salt, soy sauce, balsamic vinegar and coriander, and stir well.
