Some time ago, I watched a program introducing snacks from all over China. One issue introduced snacks in Xishuangbanna, and a chicken foot immediately attracted me. Just put the cooked chicken feet in a garlic mortar, add garlic, millet pepper, lemon, vinegar, salt and other seasonings and mash them together for a while. It looks quite interesting. It happens that I still have the chicken feet I bought last time in the refrigerator. Let me try. It's just that my material is not as much as that on TV, so I adjusted it myself. No mashed garlic, just a rolling pin and a deep bowl.
Ingredients: chicken feet, Hainan orange, garlic, ginger, chopped pepper, pepper, shallot, soy sauce, vinegar and salt.
Practice steps:
Step 1: Cut off the toenails of chicken feet and wash them. Chicken feet should use this short pole, not that long pole.
Step 2: Prepare the ingredients. I use chopped pepper instead of millet pepper, chopped green onion instead of coriander and green orange instead of lemon.
Step 3: Cook chicken feet in cold water and add pepper to remove fishy smell. After the water boils, turn to medium heat and cook for about 20 minutes.
Step 4: Pick up the cooked chicken feet and soak them in ice water for at least 10 minute.
Step 5: It is best to have garlic paste. I found a deep bowl, put ginger and garlic in it, cut the green orange in half, beat it with a rolling pin for a while, and then mash the garlic and ginger.
Step 6, add chicken feet and beat them with a rolling pin for a while until the bones are loose. In fact, there is another way to chop the back of a knife, which should be more powerful than a rolling pin.
Step 7, add salt.
Step 8: Add chopped pepper and mix well.
Step 9: Taste the salt and add some soy sauce and vinegar. I added three little green oranges.
Step 10. Finally, mix well and serve.
