The specialty dessert in Guangfu is Shuangpi Milk.
In recent years, the province has unified the formulation of "Bay Area Standards" for the three major cuisines of Cantonese cuisine: Cantonese cuisine, Hakka cuisine, and Chaozhou cuisine.
Among them, Shunde District of Foshan City takes the lead in compiling the "Bay Area Standard" for Cantonese cuisine.
Recently formulated "Steamed Eel with Black Bean Sauce", "Steamed Grouper", "Roasted Suckling Pig", "Eight Treasures Winter Melon Cup", "Boiled Shrimp", "Fried Crab with Ginger and Green Onion", "Stewed Bamboo Shredded Chicken with Coconut"
and 7 other Cantonese cuisine group standards.
After confirmation by the Guangdong-Hong Kong-Macao Greater Bay Area Standardization Research Center, it was officially released in the form of a "Bay Area Standards" list.
In addition, Shunde has formulated 5 "Bay Area Standards" for gourmet dishes in 2021, including "Four Cups of Chicken", "Roast Goose", "Fried Fish Cake", "Double Skin Milk", and "Split Fish Soup".
This means that the 12 Cantonese dishes led by Shunde, the concept of "one table of dishes in the Bay Area" and "ten dishes, one soup and one dessert" have officially taken shape.
This will further promote Foshan’s food culture to go out of Foshan, integrate into the Bay Area, and go global.
Food introduction: Double skin milk is a Cantonese dessert. The upper layer of milk skin is sweet and fragrant, and the lower layer of milk skin is fragrant and smooth.
It tastes rich in aroma and tender in the mouth.
The method of making it is to put milk into a small bowl and heat it in the microwave for two minutes.
Pour into a bowl and cool until it forms a crust.
Pick up a corner with chopsticks and pour into a large bowl.
Beat the egg whites, use a strainer to filter the egg liquid and mix with the milk.
Then slowly pour the milk into the bowl with the milk skin left on it, so that the milk skin floats.
Wrap in plastic wrap and steam for 10-15 minutes until solidified.
It originated in Shunde, Guangdong. According to legend, a farmer's boy accidentally concocted it while cooking.
After continuous development and spread, double skin milk can be found in many Cantonese sweet shops in Guangdong, and it has become a very popular dessert.
