1. Ingredients: razor clams, vermicelli, garlic, shallots, diced carrots, vegetable oil, white pepper, salt, oyster sauce, sugar, cooking wine.
2. Prepare the required ingredients.
3. Soak the vermicelli in cold water and set aside.
4. Chop the garlic, chop the carrots, and chop some green onions.
5. Heat oil in a pan, pour in half of the minced garlic, and fry slowly over medium-low heat until fragrant.
6. When the minced garlic turns golden brown, pour in the remaining minced garlic, chopped carrots, and chopped green onion, stir-fry briefly, turn off the heat and put it into a bowl and set aside.
7. Prepare a pot of water, add a spoonful of cooking wine and bring to a boil. Add the razor clams and blanch them for about 1 minute.
