2. Remove heads, sides and intestines from live shrimps. After washing, add salt and cooking wine and marinate for 10 minutes.
The matter of cutting the sides is not as complicated as you think. Just cut it in half with kitchen scissors (the kind of big thick scissors) and remove the shrimp lines. The porridge will be more delicious when the shrimps are cut open;

4. When cooking porridge, first bring the porridge to a boil over high heat and stir constantly to prevent the porridge from sticking to the bottom of the pot. Stir until the porridge boils, then turn to low heat. After low heat, the frequency of stirring should also be reduced, otherwise the rice grains will be scattered and the porridge will easily become too thick. If you feel that the porridge is too thick and you need to add water, try to heat the water, because traditional casseroles cannot be used alternately between hot and cold, and hot porridge will easily crack when exposed to cold water.
5. Boil the rice until it blooms, add the marinated shrimp, and season with salt, pepper, etc. When you feel the rice is almost cooked, add shredded ginger. Cook for 5 minutes, turn off the heat and add chopped green onion and celery. Put a few drops of sesame oil and the aroma will come out of the oven.
Ingredients also need to be added in order, and ingredients that are easy to cook should be put last, such as minced green onions and minced celery.
