It is said that in the early 1930s, there was a man named Li Bao in Hankou who sold jelly and soup noodles in the Guandi Temple area.

One summer evening, Li Bao still had a lot of noodles left. He was afraid that they would go rancid, so he cooked the noodles and dried them on the chopping board.

While packing, Li Bao accidentally poured sesame oil from the oil pot on the noodles.

He had an idea at that time and simply mixed the sesame oil into the noodles and then fanned the noodles to cool down.

The next morning, Li Bao scalded the noodles mixed with sesame oil in boiling water, then drained the water and put it into a bowl, then added the sesame paste, chili sauce, mustard, onions, ginger, garlic, and soy sauce used to sell jelly.

With condiments such as balsamic vinegar, the fragrance suddenly hits your nose, causing people to rush to buy it.

After eating the noodles, someone asked Li Bao what kind of noodles he was selling, and he blurted out that they were "hot dry noodles."

From then on, Li Bao specialized in selling "hot dry noodles" and taught many apprentices.

A few years later, an apprentice named Cai opened a hot-dry noodle shop on Manchun Road, Hankou. The shop was named "Cai Linji" and gradually became a famous hot-dry noodle shop in Wuhan.
