Specific preparation method
The first step: prepare the ingredients. 500 grams of glutinous rice, 300 grams of pork, appropriate amount of rice dumpling leaves and appropriate amount of rice dumpling rope. (It is best to choose round grains for glutinous rice, which will have a stickier and glutinous texture. For pork, you can choose pork leg or pork belly.)
Step 2: Soak the rice dumpling leaves and rope until soft and clean them . (If it is dried rice dumpling leaves, soak them one night in advance until soft.)
Step 3: Wash the glutinous rice and soak it for five or six hours.
Step 4: Peel the pork, cut into 2-3 cm pieces, then add 2 spoons of light soy sauce, 1 spoon of dark soy sauce, 1 spoon of cooking wine, 1 spoon of salt, and 1 spoon of sugar with your hands Catch it evenly and marinate it for 3-5 hours to fully absorb the flavor of the meat.
Step 5: Put the rice dumpling leaves into the hot water pot and cook for 15 minutes. After cooking, take them out and put them into cold water and set aside. (The boiled rice dumpling leaves will be more flexible and will not break easily when wrapping.)
Step 6: Drain the glutinous rice, then add 1 spoon of salt and 1 spoon of dark soy sauce Mix well.
Step 7: Start making rice dumplings. Take two rice dumpling leaves and cut off the hard corner at one end, as shown in the picture.
Step 6: Roll the rice dumpling leaves into a cone shape, as shown in the picture.
Step 7: Put glutinous rice into the rice dumpling leaves, and then put two pieces of meat.
Step 8: Add glutinous rice and compact it with a spoon. As shown in the picture, don’t fill the rice too full.
Step 9: Fold the top rice dumpling leaves downward until they completely cover the glutinous rice. Then pinch off the leaves on both sides and fold them up.
The tenth step is to tie up the rice dumplings. After all the rice dumplings are wrapped, put them in the pot and cook. (When cooking meat rice dumplings, the water must cover the rice dumplings. After boiling over high heat, turn to medium and low heat and cook for 2 hours. Turn off the heat and simmer for a while before eating. The taste will be better.
