1. Add a little salt or alkaline flour to the flour to form a slightly hard dough, let it rest for fifteen minutes and knead evenly. Divide the dough evenly into four equal portions (halve the flour and divide it into two portions) and let it rest for ten minutes.

Roll it into a pancake and bake it in a pan until half cooked. After cooling, stack them into one piece and cut into long strips.

Cut the mutton into cubes, cut the potatoes into cubes, and cut the mushrooms into cubes. Prepare the required materials

Put twice as much vegetable oil in the wok as usual for cooking. Stir-fry the mutton until the meat turns white. Add minced peppercorns, green onions, ginger, garlic, and chili powder, then pour a little soy sauce, then add diced potatoes and other vegetables you like, stir-fry for a while, then add the tomatoes, and add some boiling water. Start simmering over low heat, then add salt. When the diced potatoes and meat are cooked, add more water to prepare the cut noodles

After the soup boils, shake the cut strips and put them into the pot. Inside, cover the lid and cook until the pancake strips are cooked (remember to flip the noodles, as the noodles absorb the soup, so add enough soup)

Tips

1. The 400 grams of flour I made was not finished by 3 people, which is the amount for 4 people. You can adjust it according to your own appetite. Increase or decrease the size.

2. Tomatoes are indispensable for Northwest people’s noodles. In winter, they make their own tomato sauce, which is especially good for making noodles. Personally, I don’t like eating fresh tomatoes in winter. The amount can be increased or decreased according to your preference

3. If you don’t have mutton, you can use beef or pork. The method of stir-frying pork belly can also be used to make other noodles.

4. This is considered a stewed glutinous rice cake. If you want to eat stir-fried battered glutinous rice cake, boil water in a pot first, boil the cut dough, and then add it to the fried meat paste. If you want less soup, That's it.
