The origin of the allusion to the famous dish:
According to legend, this dish was created by Yu, the first-grade wife of Bi Qiang, the "Four Ministers" of Shitai County in the Ming Dynasty. Once, the emperor suddenly visited Shangshu Mansion as a guest. In addition to delicacies from the mountains and seas, Mrs. Yu specially cooked a Huizhou home-cooked dish - hot pot. Unexpectedly, the emperor enjoyed the meal with gusto and praised it endlessly. Later, when the emperor learned that the delicious hot pot was actually cooked by Mrs. Yu herself, he said that it turned out to be a "first-grade hot pot"! The name of the dish was finally decided.
The cooking of "Yipin Guo" is more particular. In the hot pot, dried bamboo shoots are placed on the bottom of the pot, pieces of meat are placed on the second layer, white tofu or fried tofu is placed on the third layer, and white tofu or fried tofu is placed on the fourth layer. It is a meatball. The fifth layer is covered with vermicelli, garnished with spinach or daylily, add seasonings and an appropriate amount of water, and then simmer over a slow fire. This dish has a strong local flavor, thick and fresh taste, which tempts the appetite.
Qianlong and Yipin Guo
When Emperor Qianlong went down to the south of the Yangtze River, he came to a mountain called Wu. It was getting dark and he wanted to find a place to rest. When he saw a farmhouse nearby, he knocked on the door. After the peasant woman asked the reason, she took good care of her. The Mid-Autumn Festival had just passed, and there were some leftover dishes at home. The peasant woman mixed the radish, dried carob, braised pork, and fried tofu buns with meat and then vegetarian ingredients, and spread them layer by layer in a two-eared pot to cook. Emperor Qianlong ate it with gusto and asked what kind of dish it was. The peasant woman casually replied "cooked in one pot". After eating, Qianlong wiped his mouth and said: "Yipinguo has an inelegant name, but this is the Huizhou famous dish 'Yipingguo'." From then on, "Yipingguo" became famous in most of China.
Hu Shi Yipin Hotpot
Hu Shi Yipin Hotpot is also known as "Jixi Yipin Hotpot", "Reunion Hotpot" and "Yipin Hotpot". Hu Shi traveled at home and abroad, always accompanying Jixi's famous dish "Yipinguo". Whenever distinguished guests come to visit or entertain friends from the same hometown, the "first-grade hot pot" must be served. When he was the president of Peking University, Hu Yong served Jixi's son-in-law Liang Shiqiu with "Yipinguo". Later Liang Shiqiu once wrote an article and recalled: "A large iron pot with a diameter of almost two feet was brought to the table hot, and it was still boiling inside. One layer of chicken, one layer of duck, one layer of meat, one layer of fried tofu, dotted with some egg skin dumplings and radish and green vegetables at the bottom. "
