Tip: Don't be stingy to buy garlic.

1~ 2kg chicken wing root
15-20 cloves peeled garlic

240ml soy sauce (low sodium)
240ml rice wine
240ml sesame oil
50g sucrose
6 grams of dried Chili noodles (or fresh red peppers)

1. Turn the pot on low heat, add appropriate amount of oil, when the oil temperature is 70% hot, put the chicken wings in the pot and fry for a few minutes, then add ginger and garlic to stir fry.

2. Take a large bowl, put soy sauce, rice wine, sesame oil, sucrose, Chili noodles and salt into the bowl and mix thoroughly. After the chicken is fried, add the mixed sauce.

3. Cook the sauce and chicken together for 20 minutes, or until you feel almost cooked.

4. When it is almost ripe, add fresh basil leaves and stir-fry for a few times, cover the pot and stew for 1 minute.

The so-called "three cups" is rice wine+soy sauce+rock sugar, and the dosage ratio is 4:2: 1. As far as the consumption of four chicken legs is concerned, 8 tablespoons of rice wine +4 tablespoons of soy sauce (3 tablespoons of soy sauce, 1 spoon of soy sauce, it is not good to put too much chicken in soy sauce)+1 spoon of rock sugar.
