Shanxi vinegar has a history of thousands of years. In the prosperous Tang and Song Dynasties, "Meiheju" aged vinegar has become famous at home and abroad, especially "Yiyuanqing" aged vinegar has become a palace product. As an authentic representative of Shanxi vinegar, "Donghu" mature vinegar started slowly due to historical reasons. In fact, it is to maintain the original traditional technology. In recent years, great changes have taken place in the "Donghu" mature vinegar, which can be described as "three years without flying, soaring to the sky" and "three years without sounding, making a blockbuster". The "Donghu" brand has changed so much that it is very promising. The key lies in its inheritance of traditional experience. However, Shanxi mature vinegar, known as the first vinegar in China, is always inferior to Zhenjiang balsamic vinegar. Some people compare Shanxi mature vinegar to a declining aristocrat. Now Zhenjiang has put forward an open challenge to vinegar bottles in Shanxi, and it is time for the government to make a big move about it. Over the years, the government has given little support to the old vinegar. Although some related policies have been introduced, they have all remained on the surface and failed to solve practical problems. Vinegar has more brewing processes than wine, but the price is cheaper, so Shanxi vinegar enterprises have not developed in recent years. The key is that they have no money. If the government is still indifferent to this situation, then the prospect of Shanxi mature vinegar is really worrying, and the expansion of Hengshun can only be said in four words: unable to meet the challenge!

At present, the average price of Shanxi vinegar per ton is only about 2, yuan, and the annual sales revenue is less than 5 million yuan. Shanxi vinegar industry is generally small in scale and has little profit. The average price of Zhenjiang aromatic vinegar, one of the four famous vinegars, can reach 45 yuan per ton, and the price difference between them is more than double. Only one enterprise in Hengshun has an annual output of 8, tons and an annual output value of more than 3 million yuan, so the difference in economic benefits can be seen. Last year, Zhenjiang fragrant vinegar enterprises have entered Shanxi and participated in the shares of individual vinegar enterprises. Shanxi vinegar industry is facing severe challenges from other provinces.
