80g butter (softened)

60g cream cheese

120g low-gluten flour

Salt 2g

Orange peel powder (you can use orange peel instead) 2g

Egg tart liquid

Granulated sugar 40g

How to make Xiaowanjia’s classic egg tart

Mix butter, cream cheese and orange peel powder.

In another bowl, combine the cake flour and salt, then pour into the butter mixture.

Shape the dough into golf ball size and divide into 12 portions. Chill in the refrigerator for at least 30 minutes.

Bring the hot water to a boil, add the sugar, then turn off the heat. Add the milk, salt, vanilla extract and eggs one by one and stir gently until all is absorbed.

Then filter the mixed liquid twice.

Grease the mold with butter.

Take 12 pieces of dough out of the refrigerator, press them into thin slices about 3 cm in diameter, then put them into the mold and use a knife to remove the excess dough.

Pour in the egg and milk mixture.

Bake at 180 degrees for 20-25 minutes.
