The full name is Huangshan Stone Chicken Stewed with Stone Ears.
Huangshan double stone pheasant-it is called stone pheasant because this animal lives in caves in the valley with poisonous snakes. To be honest, the appearance of stone chicken has nothing to do with chicken. It is a frog, similar in shape to bullfrog, but larger in size and black in skin. So I think it's better to call it "Shi Wa".
Stone chicken is a special material in Anhui cuisine. Whether braised or steamed, the fragrant aroma and plump hind leg meat are even worse than chicken or bullfrog meat. Huizhou's famous flavor dish "Steamed Stone Chicken" is steamed with ham slices in a bowl. The soup at the bottom of this dish is original and delicious.
It is said that eating more stone chickens in summer can prevent prickly heat and sores. Huangshan locals like it very much, and it is also an excellent dish for entertaining guests.
