Egg yolk pudding dessert
Ingredients: 400g milk, 4 egg yolks.
Methods/steps
1 First, turn on the high fire for 5 minutes, bring the water to a boil, add white sugar and stir it into sugar water.
2 Add eggs and fresh milk to the sugar water and mix well.
3 Mix a cup of sugar with half a cup of boiling water until golden brown and cook it into caramel.
4 Pour a little boiled caramel into the model.
5 Pour the pudding material into the model.
6 Add about 1/3 warm water to the baking tray, and then put it in the microwave oven to bake at medium heat for 15 minutes.
Egg yolk puffs
Ingredients: meringue:150g of medium gluten flour, 50g of lard, 5g of fine sugar, 65g of water (I didn't use that much because of the water absorption of flour), meringue:120g of low gluten flour, 60g of lard, 375g of egg yolk: red bean paste, 8 salted egg yolks.
1. In the raw material of oil skin, lard is added with sieved medium powder and fine sugar, and kneaded into powder, added with water until the surface is smooth, covered with a fresh-keeping bag and left to stand for 30 minutes;
2. Add lard, a crispy raw material, into the sieved low flour and knead evenly; Loose oil skin is divided into 18g/ sheet, and crisp oil is divided into 12g/ sheet;
3. Crush the oil skin, add a portion of crispy dough, wrap it into a ball, and close it up;
4. Take a portion of pastry and roll it into beef tongue;
5. Roll the loosened dough into long strips, then roll it into small tubes and relax for 20 minutes.
6. Wash the egg yolk, pour in a little wine (to remove fishy smell), bake at 180 degrees until the surface is golden and cool, and cut in half;
7. Red bean paste is divided into 25g/ piece, and each piece is wrapped with half salted egg yolk;
8. Take a loose pastry, seal it, press it from the middle with your thumb, then tighten the four corners into a ball and roll it into a circle;
9. Wrap it with 7 tightening mouths, close it down and put it in a baking tray;
10. Sweep the egg yolk liquid evenly on the surface, sprinkle a little sesame seeds, put it in an oven preheated to 180 degrees, and fire the middle layer for 30 minutes.
