Its technological process was divided into soaking rice, scalding rice, washing rice, gelatinizing, cooling, adding koji and saccharifying, cooling and adding enzyme mother, fermenting in the tank, squeezing, aging and blending. After the founding of the People's Republic of China, the people's government built Jimo Yellow Winery on the basis of the old tavern, innovated the brewing equipment and technology of the old wine, and gradually realized the factory and mechanized production. The old quality identification methods such as visual inspection, nose sniffing, hand touching and ear listening have been replaced by the use of a milling machine for frying rice, and a stainless steel machine for pressing wine. Now, the alcohol content, sugar content and acidity of Jimo old wine produced are not less than 11.5%, 1% and .5% respectively. Jimo old wine is pure in color, mellow and refreshing, warm in nature, slightly bitter and fragrant, with a long aftertaste. According to the test, Jimo old wine contains 17 kinds of amino acids, 16 kinds of trace elements and enzyme vitamins needed by human body.
