1. Glutinous rice: Preparation materials: white glutinous rice and black glutinous rice, red bean paste, red dates, lotus seeds, white sugar, white oil or butter, nuts and preserved fruits. Detailed method: First mix the two kinds of glutinous rice, wash them, and soak them for at least 3 hours. Soak the lotus seeds for half an hour, remove the cores of the red dates and cut them into strips. After the glutinous rice is soaked and steamed, stir in a little white oil and white sugar into the glutinous rice while it's still hot. Spread a layer of white oil evenly in the bowl, put dried fruits and nuts on the bottom of the bowl, and arrange it in the shape you like. First put a layer of glutinous rice, place nuts and preserved fruits on the inside of the bowl, cover it with a circle of glutinous rice, and fill the middle with red bean paste. Cover with another layer of glutinous rice, compact and cover with plastic wrap. Steam it in the pot for 25 minutes, then pour it out while it's still hot. In addition to lotus seeds, melon seeds, walnut kernels, red dates, and raisins, you can also add other nuts and dried fruits according to your own preferences without being rigid.
2. Glutinous rice and lotus root balls: Preparation materials: glutinous rice, meat filling, lotus root, mushrooms, green onions and ginger, seasonings.
Detailed method: Wash the glutinous rice and soak it in water for two hours to control the moisture. Soak the mushrooms, wash and cut into pieces. Peel and wash the lotus root and cut it into finely chopped pieces. Add minced onion, ginger, white pepper, cooking wine, oyster sauce, light soy sauce, starch and salt to the meat filling and stir evenly, then add minced mushrooms and lotus root and continue to stir. Shape the meatballs into evenly sized meatballs. Evenly wrap a layer of glutinous rice on the surface of the meatballs. Place the meatballs on a plate and steam over high heat for half an hour. After steaming, you can put wolfberry garnish on the glutinous rice lotus root balls to make them more beautiful. Apply a little oil on the plate where the glutinous rice balls are steamed to prevent them from sticking.
3. Red bean glutinous rice cake: Preparation materials: two parts of glutinous rice flour, one part of sticky rice flour, red beans, brown sugar, and warm boiling water.
Detailed method: Soak red beans for more than 4 hours, rinse well after soaking. Add water to cover the red beans and cook. Add brown sugar just before the red beans are cooked. Cook until the brown sugar melts and all the water dries up. Gently crush it with your hands to form bean paste, which means it is cooked. After the glutinous rice flour and sticky rice flour are mixed evenly, add the honey red beans and stir evenly. Slowly add warm boiling water, stirring while pouring, stop adding water when no dry powder is visible. When your hands are not hot, knead into dough, roll into long strips and cut into slices. Brush a little oil on the steamer and arrange the cut glutinous rice cakes, leaving a gap between each piece. Pour cold water into the pot, turn on the steam and steam for 15 minutes. Turn off the heat and simmer for 5 minutes before taking it out. The glutinous rice cake is sticky and elastic and very delicious, but young children and the elderly should not be gluttons.
