Huajiang dog meat in Guizhou. I remember running production trucks with Master in the 199s, pulling goods from road construction machinery to Dongguan, Guangdong and other places. At that time, there was no expressway in Guizhou. Every time I pass through Guizhou, I have to eat dog meat in Huajiang, Guizhou. Because Master runs this line all the year round, he knows exactly which dog meat is authentic, and he is familiar with the boss, so every time he arrives at the store, the boss grabs a live and fresh milk dog from the iron cage and slaughters it. In less than 2 minutes, a pot of delicious Huajiang dog meat was served on the table.
Twenty minutes ago, it was a vivid life. Because some people like nursing dogs, they were deprived of their lives in an instant. What annoys me is that while the boss was slaughtering, he was still saying, "Don't blame the dog, you are a dish in the world. If someone wants to eat it, I have to slaughter it ..."
When I saw Master eating with relish, I had to take some side dishes to deliver the meal. Master saw that I don't eat dog meat, so she scooped some dog meat in my bowl with a spoon and forced me to taste the delicious food in the world. I put the weight in my mouth, remembering that life was fresh just now, but now it is in a person's stomach, which is so cruel. When I think about it, I "wow" and spit it out, and I can't eat any more.
I have lived in Qiandongnan, Guizhou Province for more than seven years from Hubei. I would like to share with you some dishes I have seen and eaten that I find strange. These dishes are revered as absolutely delicious in the local area, but I dare not stretch my chopsticks, and I am addicted to them.
1. Boiling tadpoles in sour soup
Not many people eat this dish, but many people in southeastern Guizhou have heard of it. After the tadpoles are picked up, they are kept in clean water for a few days. After the mud of the tadpoles is spit out, the sour soup is boiled, and the live tadpoles are directly poured into the sour soup to be cooked and ready to eat. Some people around me have eaten it and said it was delicious. I brushed it on some small video platforms and cooked it by local people. It is estimated that I want to throw up when it is in front of me.
2. Cold blood
In southeastern Guizhou, cold blood is basically a must-have dish for pigs who kill the year. Besides pig blood, cow blood and sheep blood can be cold. After the blood is coagulated, cut it into small pieces like tofu with a knife, and then add pepper powder, onion, ginger, garlic, coriander, salt and so on. They taste with relish. When I first saw it, I felt a bit like the primitive life of eating and drinking blood, and it was a bit really disgusting to think about that scene. General beef restaurants sell them, and most of them are limited.
3. Fried spankers
There are more insects to eat here, and there are more grasshoppers and spankers. I basically accept grasshoppers now, but I can't accept fried spankers all the time. That stinking spanker, I can't get chopsticks down.
4. Cattle and sheep are flat
When I first came here, I thought it was a whip of cattle and sheep, and I didn't dare to eat it. Later, I went to Zhaoxing Dong Village in Liping to eat once, and it felt quite fragrant. Now it is basically acceptable. Cow and sheep are flat. They take the semi-digested grass juice in their stomachs, stir-fry beef and mutton, or rinse soup. It smells like cow and sheep dung and tastes like grass. The cows in Rongjiang are flat and authentic.
5, broken ear root
The first meal I came here impressed me the most was broken ear root. The root of broken ear is the root of houttuynia cordata Thunb. Here, cold salad and eating powder are necessary condiments, and they are also cooked separately. The common thing is to fry bacon with broken ears. When foreigners eat this, they always feel a fishy smell spread all over the body from the mouth. I've been here for so many years that I can't get used to it.
6. Sour soup
There is a saying in southeastern Guizhou: Don't eat sour for three days, walk around. Sour soup can be divided into white acid and red acid, the more common one is red acid, and sour soup is also listed as the geographical symbol of Qiandongnan Prefecture. The first time I ate white acid, I felt no different from the swill I fed to pigs in my hometown. Later, when I ate red acid, I felt the taste was quite unique. The most unique feature of red acid is the small tomato here, which is more sour and fragrant in the wild. You can cook anything in sour soup, and almost everyone here can cook it.
Of course, there are many others, such as white meat weighing half a catty, eating fish without descaling, and not cutting the belly. It's not wonderful, but eating habits are different, and only you can't think of it. Welcome to Guizhou for a taste.
I am a native of Qiandongnan, Guizhou. In my hometown, Rongjiang County, Qiandongnan, Guizhou, the specialties here are beef and sheep shriveled, salted fish, Dong's cooked fish, and cold hairy blood. Next Xiaojun will introduce them to you one by one.
1. Cow and sheep are flat
Cow flat, also known as "Herbal Soup", is a dish with unique local characteristics in Rongjiang County. Cattle and sheep are very particular about the production of flat. The selected cattle and sheep are stocked in the mountains. When killing cattle, take out the food in the cow's stomach, squeeze out the juice and filter it, and the "flat" juice will be ready.
2. Pickled fish and bacon
After salted with good field fish and fat and thin pork belly, mix glutinous rice, Chili powder and pepper evenly. Pickled fish is stuffed into the belly of the fish, and salted meat is evenly spread on the surface of the fish. Specially pickled fish and pork belly will have a sweet and sour taste and a strong fragrance. There are many ways to eat, such as frying and burning, and the cured meat can also be stir-fried with vegetables such as broken ears, which is excellent in taste.
3. Dong family cooks fish
In Rongjiang County, Guizhou Province, the ancestors of local villagers have the custom of raising fish in rice fields. Every year in the harvest season, the local villagers in Dongzhai village begin to harvest fish in the fields. As the saying goes, it is a traditional custom of the Dong people to eat roasted fish without fish. Dong people's roasted fish has always been famous for its fresh, tender, fragrant and beautiful taste, and its eating method is novel and unique. Its preparation method is to remove gall bladder first, then slowly cook the fish with warm fire, slowly roast, slowly roast until the fish is brown and dripping with oil, then remove the internal organs, add salt, pepper, ginger, garlic and temporarily collected wild spices, leeks, Mao Mao dishes and other local unique original wild vegetables, and mix well.
4. cold maoxuewang
is made directly from fresh pig blood, which is a dark dish that some people like and some people can't accept. Cold pig blood first, the solidified pig blood is divided into neat pieces with a knife. After cutting the pig's blood, add seasoning such as salt, pepper, onion, ginger and coriander according to personal preference, and after stirring evenly, a fresh cold pig's blood can be served. < P > Well, these are several famous specialties here. Friends from other places must try it when they come to Qiandongnan.
Houttuynia cordata Thunb. It's really inedible. It tastes too strong.
Tofu soup with fungus on it is smelly and fragrant.
Cows are flat.
Cows are flat, but they dare not eat it. They smell faint grass.
I ate pepper seedlings in Panxian County, Guizhou Province, stabbing the tips of five excellent seedlings and scalding hot pot, but the taste was ok.
The roots of broken ears are also called Houttuynia cordata. During my stay in Guiyang, no matter in the vegetable market, There is a faint fishy smell. Anyway, I can't accept it. The local Houttuynia cordata is as essential as my hometown cooking like coriander. I still remember the days when I was in Guiyang. I got up at 5 o'clock every day and came to the gate of Guizhou University to buy hand-grabbed cakes. Although my career has not been successful, it is indeed an unforgettable memory. The most memorable food is Huaxi beef powder on the street. I can't remember any street, but I can definitely find it when I go back. There is a big bowl of beef in 1 yuan. Every time I go there, I have to queue up. Now I think about it. I really miss the taste. Later, I have been to Beijing and Shanghai, and I went to Huaxi Beef Powder specially, but I didn't find the same taste. I don't know if the original store is still there, but the taste is still not the same as that of that year.
Walking from Anshun Field to the mountains in the southwest, there is a county town near Guangxi, named Anlong. In the 199s, I went to Anlong County many times, but from Anshun to Anlong, I had to climb several mountains, one of which was called Huajiangpo. Huajiangpo is famous for its dog meat hot pot. Huajiangpo is a small village on the mountain, with few households. It is spread out along Panshan Highway, and most of them live on dog meat.
Every winter solstice, people in Anshun or Guiyang will go to Huajiangpo to eat dog meat as the beginning of winter. I don't know from which dynasty, people there dreamed of a warm winter and needed to find a kind of food that could resist the immersion of mountain wind, make the human body hot and dry, and make the blood flow happily, so the dog was targeted! Because, there is no more qualified choice. This is the misfortune of dogs, this is the expectation of human ancestors, and no one can be blamed!
Most dog meat shops in Huajiangpo don't do "kill and buy now" business, so there are fewer bloody scenes that attract people's attention. The mountain breeze is Xu Lai, and the slopes are filled with grass and flowers.
The store puts the cooked dog meat on a long table near the door in chunks, which gives visual impact to passers-by. If passers-by come near the table again and smell the smell, they are doomed to stay, and there is no way out!
one or several dogs are tied in front of the store, but they are not killed. Because it has several bright colors, it is used as a model and won't be killed for a long time. There are frequent cannibals who are familiar with those who haven't killed in front of the door for a long time. When they see them, they wag their tails and reach a special harmonious situation.
There are weeds and chrysanthemum plants on Huajiang slope, which have been seen in other mountainous areas, but they are not as spicy as Huajiang. I think it is the inspiration of Huajiang Hotpot. Although, it's just a side dish with ingredients at the bottom of the pot.
In those years, I used to pass by Huajiangpo, and I ate very little, for no other reason than being shy! Later, I had spare money in my pocket and never passed Huajiang again. The year before last, I saw Huajiang dog meat chain in Shijiazhuang, and I was impressed by Huajiang Mountain Wild. Without Huajiang Mountain Wind and Compositae weed, it would be tasteless.
