Ham introduction
Ham, whose English name is ham, is the leg of pickled or smoked animals, such as beef leg, lamb leg, pig leg and chicken leg. It is an animal leg after curing, smoking, fermentation and drying. Ham is a pig's hind leg. Jinhua ham should be made from the hind legs of Jinhua Liangtouwu, but as Jinhua Liangtouwu is almost extinct, modern standard ham should be made from ordinary salted legs.
