There are three ways to make the Wa people's staple food: porridge, rotten rice and dry rice. Two or three meals a day are different. Cooking is a temporary meal, so you can eat as much as you want. Wa people generally like to eat rotten rice (between dry rice and porridge, semi-dry rice and semi-porridge). The cooking method is to put rice, vegetables, salt, pepper and meat (such as pork and beef) into a pot and cook them together until the rice is rotten, which is extremely delicious and attractive. In some areas, the staple food is dry rice, and the non-staple food is mainly vegetables, melons, sour bamboo shoots, salt, peppers, garlic or fresh meat, which is the most exquisite meal for Wa people at ordinary times.
The Wa people call it "Manyabulou", which is a delicious dish for the Wa people to welcome their guests. It can be eaten as both a meal and a dish. It is much softer than ordinary rice and much drier than porridge. There are two ways to do it, one is to tear the chicken rice by hand, and the other is to cut the chicken rice by knife. The production method is unique, the color is bright, the taste is waxy, smooth, fresh and tender, and unique. Wa rotten rice is a "dish" for Wa people to entertain VIPs, which is actually thick porridge. There is a saying that because the Wa people have the custom of eating "big pot rice", just like whoever kills a pig, the whole village will go out and clean up the pork. Then how can the whole village share a chicken, so it is made into porridge, and everyone who comes can share a bowl.
This kind of food is delicious, easy to digest and rich in nutrition. In the past, when the living standard was not high, the Wa people "lived to survive, worked hard to survive and drank in turn", that is, all kinds of plants were mainly mixed with a small amount of food and boiled into porridge to drink in turn. With the continuous improvement of living standards and the accumulation of practical experience, all kinds of rotten rice with local characteristics are becoming more and more fashionable and varied. Chicken rotten rice is very common among Wa people.
The specific preparation method of rotten chicken rice is: roast the killed chicken on the fire until the skin turns yellow, then put the chicken and rice, sour bamboo shoots, salt, pepper and pepper into the pot. When the rice is ripe, take the chicken out and tear off the meat with your hands, together with onion, fennel, garlic, pepper, mint and coriander. It should be noted that Wa people generally only use featherless local chicken to make rotten chicken rice, and avoid using white feather chicken because they think it is impolite to their guests.
