Qiao Zui is a very traditional Chinese delicacy, and its preparation requires certain skills and patience. The characteristic of this dish is that the mouth of the fish is tilted up to resemble a mouth, hence the name "Qiao Zui". Here’s how to make this delicacy.

Onion, ginger and garlic: appropriate amount
Cooking wine : Appropriate amount
Light soy sauce: Appropriate amount
Dark soy sauce: Appropriate amount
Sugar: Appropriate amount
Chicken essence: Appropriate amount
Starch: appropriate amount
Oil: appropriate amount
Steps
1. Preparation work
Slaughter the fish, remove the scales and guts , remove the head and tail, then wash the fish and dry it.
2. Cut the fish into thin slices
Cut the fish into thin slices, each slice is about 1.5 cm wide, 2.5 cm long, and about 0.3 cm thick.
3. Marinate the fish fillets
Put the fish fillets into a large bowl, add salt, onion, ginger, garlic, and cooking wine, mix well and marinate for 10 minutes.
4. Fried fish fillets
Add starch to the marinated fish fillets, mix well and fry in an oil pan until golden brown.
5. Cook the fish fillets
Put the fried fish fillets into the pot, add appropriate amount of light soy sauce, dark soy sauce, sugar, chicken essence and water, and cook until the soup becomes soupy. Just thicken it.
