Buddha jumping over the wall, also known as Mantanxiang and Fushouquan, is a famous local dish in Fuzhou, Fujian.
During the light year of Qing Dynasty, officials of Fuzhou Bureau of Official Money hosted a banquet in honor of Fujian Public Security Minister Zhou Lian. During the dinner, there was a dish called "Fushouquan", which was made of chicken, duck, sheep elbow, pig's trotters, spareribs and pigeon eggs. Zhou Lian was very satisfied after eating. After returning home, Zhou Lian immediately ordered the chef Zheng Chunfa to copy it according to law. On the basis of the original dishes, he reduced the amount of meat, added a variety of seafood and enriched the contents of the dishes. Later, Zheng Chun sent it to Fuzhou East Street to open a "Sanyouzhai" restaurant, and served it at the banquet of a literati gathering. Literati cheered after tasting it, and some people improvised a poem one day: "The altar is full of meat and fragrance floating around, and the Buddha abandoned Zen and jumped over the wall." From then on, this dish is called "Buddha jumps over the wall".
