Method

Method
1. Split the silver carp head in half, wash it, and cut it into large pieces. Season with a small amount of salt, Huadiao wine, pepper and oyster sauce for 10 minutes.
2. Cut onions into large pieces, peel garlic into cloves, and cut green onions into sections.
3. First add some olive oil to the casserole, add the garlic cloves, then add onion slices, mushrooms, onion and ginger segments, fermented glutinous rice juice and a little salt, then put the fish head pieces, and add on top of the fish head. Tips

Fish head vermicelli casserole
Ingredients
1 fish head (about 800g), 100g dried vermicelli, 200g enoki mushrooms, 2 star anise (aniseed), 2 tablespoons Shaoxing wine (30ml), 2 green onions, 3 cloves garlic, dark soy sauce 2 tablespoons (30ml), 1 teaspoon dried chili pepper (5g), 1 tablespoon sugar (15g), 1 teaspoon salt (5g), 4 tablespoons dry starch (60g), 1000ml oil (actual consumption 30ml)
Method
Wash the fish head and remove the gills, cut the fish head into two halves from the middle with a knife under the lower jaw, wipe off the water, and pat the surface with a layer of dry starch. Soak the dry vermicelli in warm water until soft. Wash the enoki mushrooms and cut off the roots.
Heat the oil in the pot over medium heat. When it is 70% hot, add the fish head and fry over high heat until golden brown. Remove and drain the oil.
Take 20ml of oil and put it into a casserole. After heating, add the green onion segments, dried chili peppers, star anise (aniseed) and garlic and saute until fragrant. Then add the fish head, dark soy sauce, Shaoxing wine and white wine. Bring sugar, salt and water (the amount of water needs to cover the fish head) to a boil over high heat, then turn to low heat and simmer slowly for 20 minutes.
Finally, put the enoki mushrooms and vermicelli into the casserole and continue cooking for 15 minutes.
