Ingredients for cold yuba: 100g of yuba, hot sauce, 2 tablespoons of cane pepper oil, 10ml of balsamic vinegar, 5ml of white sugar, 10g of light soy sauce, 10ml of sesame oil, 5ml of sesame oil
1. Prepare the ingredients. Adding some leeks is both delicious and pretty. The red pepper is purely for decoration and can be omitted. Soak the yuba in advance and soak it in cold water for more than 2 hours. The shape of the yuba soaked in cold water will be neater. If the yuba is soaked quickly in hot water, the yuba will be easier to break and become watery, which will affect the taste.
2. Soak the yuba in cold water and cut into small sections. Wash and cut the leeks into sections, and cut the red pepper into thin strips. 3. Add water to the soup pot and bring to a boil, add the cut yuba, and then turn off the heat after the water boils. The yuba is already cooked, just blanch it. 4. After turning off the heat, put the leek segments and red pepper shreds into the pot and scald them. The red pepper shreds and leeks will be cooked easily, so it’s done.
5. Rinse the blanched yuba, leeks and red pepper shreds with cold boiling water. 6. Squeeze out the water from the dried yuba, put it into a cooking bowl, and add all the seasonings such as chili sauce, light soy sauce, sugar, balsamic vinegar, and sesame oil. 7. Mix all the seasonings and serve the delicious and refreshing cold yuba immediately. Enjoy.
Tips: 1. Both hot sauce and light soy sauce have salty taste, so there is no need to add any more salt. 2. I like to put some cane pepper oil when mixing cold dishes. If you don't like it, you can omit it. 3. After the yuba has been soaked in water, the water must be squeezed out and then the seasonings added and mixed well.
