Pengzhou specialty snacks: 1. Jiuchi Salted Duck People in Jiuchi, Pengzhou City, have always had the habit of raising ducks. In 1986, Jiuchi Town was hailed as the "Hometown of Salted Duck" by Sichuan Province.
As early as the Ming Dynasty, nine-foot salted duck was quite famous and was a must-have dish for local guests.
Nine-foot salted duck is divided into two types: dry salted duck and braised salted duck. The workmanship is exquisite.
Dried salted duck is soaked in salt, spices, smoked and air-dried.
Braised salted duck is dried in the sun, smoked with high-quality sawdust, and then braised in a pot with star anise, fennel, pepper, ginger, tangerine peel, soy sauce, sugar, pepper, apple, rock sugar and other spices.
2. Oil-Drip Dumplings Oil-Drip Dumplings were founded in the "State-owned Weilan Snack Shop" located on West Street, Tianpeng Town in the early 1980s.
It was called "red oil dumplings" at the time, but was later renamed "drip oil dumplings" after improvements and innovations by the store's chef Yin Huaqing.
The "oil-drip dumplings" are all stuffed with pork, without adding any fresh vegetables, and are dripped with special "red oil" when they are served, hence the name.
In December 1990, it participated in the Chengdu Food Expo and was rated as "Chengdu Famous Snack".
