Liangpi is a food very similar to jelly. It is also a common food in summer and has the same delicate taste.
Many people eat Liangpi cold and mixed with it, and there are many ways to make Liangpi. Different methods of Liangpi can also bring different taste enjoyment to everyone.
1. How to make cold skin 1. Mix fine flour into dough and let it rest for 10 minutes.
2. Wash the dough repeatedly with water.
3. Wash until the water is clear to form facial essence.
4. Gluten and a little edible alkali.
5. Spread evenly in the basin.
6. Let the facial cleanser sit for 3 to 5 hours.
7. Pour out the upper layer of clean water and keep the lower layer of facial serum.
8. Steam the gluten in the steamer for 10 minutes.
9. Steam and cut into pieces.
10. Pour the batter water into a flat-bottomed stainless steel plate and boil it in a hot water pot for two minutes. When the surface becomes transparent, take the plate and put it in cold water to peel off the skin.
11. Stir together red pepper, cucumber shreds, garlic paste, rice vinegar, Weijixian, refined salt, sesame pepper oil, dough and gluten.

2. How to make refreshing cold skin. Cut the cold skin into strips, slice the gluten, shred the cucumber, mince the coriander, mince half of the garlic and slice half of it.
Take a pot, pour an appropriate amount of water into it and boil it, add the bean sprouts, add a little oil, simmer until cooked and set aside.
Boil the water in which the bean sprouts were cooked just now, add vinegar, sugar, star anise, bay leaves, garlic slices, ginger slices, peppercorns, and fennel into the pot and cook over low heat for 15 minutes. Add water starch to thicken, boil and filter.
Add the sesame oil to the sesame sauce and mix well. Put the cut cold skin into a bowl, top with gluten, minced garlic, cucumber shreds, bean sprouts and top with the mixed sesame sauce.
Finally, pour the cooked sauce and sprinkle with coriander.
3. Shredded pork cold skin 1. Make cold skin in advance.
Use flour (refined powder) to make a batter. Don't make it too thin. Stir evenly until it becomes fluid when poured.
Prepare a stainless steel flat plate (I used a large size).
2. Add water to the pot and bring to a boil. Pour the batter into a flat plate and spread it into a thin layer. Put the flat plate into the boiling pot. Take it out and let it cool for 2 minutes after the dough changes color. Because the plate is hot.
It has been washed by cold water, so the dough is completely peeled off and continues to be soaked in cold water.
3. By analogy, I made three sheets of dough, and finally cut them into long strips for later use.
4. Add a little oil to the pot. When the oil boils, add the shredded pork and spread it out. Add chopped green onion, flavored rice, salt and then add shredded cucumber and stir-fry until cooked. Pour these vegetables into the dough and mix well.
5. Finally add appropriate amount of vinegar, sugar, red oil, stock essence or chicken essence, and stir evenly.
