Speaking of the delicious food in my hometown of Jiangxi, it's really countless! Salted duck, duck kidney in soy sauce, fried meatballs, bacon and preserved fish, fried fish rot, steamed pork powder ... are all essential foods for Jiangxi people in the New Year, among which fish rot is my favorite.
According to historical records, the history of fish rot in Jiangxi is called "wrinkled yarn", which originated in Dade period of Yuan Dynasty. After more than 7 years of development, "wrinkled yarn fish rot" has become a dish with local characteristics in Jiangxi, especially in southern Jiangxi. People often regard it as a necessary finale for banquets to pray for family reunion and happiness.
Before the Spring Festival, as my mother's assistant, I really experienced the feeling of being a "chef". What I did was fish rot.

My hand turned wildly like a gear, and it soon formed a "meat paste tornado". It took about half an hour, and it can be confirmed that the semi-finished fish has been successfully prepared. Everything is ready, only the pot is needed. When the pot temperature of 4 kg cooking oil reaches the boiling point, I hold the fish in my hand, squeeze out a small ball, gently shovel it with a small spoon, and plop it into the oil pan. It only takes seven or eight seconds, and the fish rot swims on the oil surface. Three minutes later, I grabbed the net spoon and turned all the fish rotters over. Oh, the white "pebbles" have gradually turned into small golden balls, and their value has suddenly doubled!
every year when I return to my hometown, I like to visit the wild. Walking on the familiar field path, I saw the green red flowers and yellow rape flowers, smelled the fragrance of the long-lost soil, and felt that I had returned to my childhood. The land is still that piece of land, and people are still that person. Maybe they have been away for many years, and their lifestyles are different. In fact, what I read is still too slow, which may be the reason why I don't want to stay at home for too long. I usually go home for less than a week.
