The water is wide and the meat is slippery. One of the famous dishes in Hubei Province is included in two books, Famous Cuisine in Three Chu and Cooking Book in Hubei, China. According to folklore, during the Kaiyuan period of the Tang Dynasty, there was a chef named Zhan in Yingshan, and his skill in cooking slippery meat was superb. He cut the pork belly into small pieces, mixed it with flour, added ten kinds of ingredients such as egg white, onion and ginger, fried it first, then cooked it, and made a dish with golden color and a shape like tofu. When Tang Xuanzong ate this dish, he felt particularly delicious and refreshing. He slipped into his throat without chewing carefully, calling it "slippery meat". I don't know why, Chef Zhan offended An Lushan. He colluded with spies to slander Tang Xuanzong, and Chef Zhan was killed. Later, after the rebellion in Lai 'an Green Mountain, Emperor Xuanzong of the Tang Dynasty discovered that he had killed the chef Zhan by mistake, and he was named the chef king. His death date was August 13th of the lunar calendar. Every day in the future, the chefs in Yingshan will get together and hold a banquet in memory of him. The first course is slippery meat.
