Prepare ingredients: 1 sea fish, 4 green onions, 3 slices of ginger, 4 cloves of garlic, 3 red peppers, 2 star anise, 2 bay leaves, 1 tablespoon of dark soy sauce, 2 tablespoons of light soy sauce, 1 tablespoon of high-concentration liquor, 1 tablespoon of sugar, half a tablespoon of salt, and appropriate cooking oil.
1. Remove the scales, internal organs and gills of the marine fish and rinse them thoroughly.
2. Coat the fish with a layer of starch.
3. Prepare onions, ginger, garlic, bay leaves, star anise, and peppers.
4. Pour oil into a hot pan. When the oil is 70% hot, put the fish into the pan and fry both sides until golden brown.
5. Add onion, ginger, garlic, chili, star anise, and bay leaves and saute until fragrant.
6. Add dark soy sauce, light soy sauce, aged vinegar, and white wine. It should be noted here that adding white wine can not only remove the fishy smell, but also make the fish taste more tender and smooth.
7. Cover and simmer for one minute. This process allows the fish to fully absorb the flavor of the sauce and spices.
8. Add appropriate amount of water, salt and sugar.
9. Bring to a boil, then turn to low heat and simmer for 20 minutes.
10. Reduce the juice over high heat until thick.
11. Take the food out of the pot and enjoy the food.
