Steps: 1 Prepare the raw materials.
?2 Cut the potatoes into thin slices and arrange them as shown in the picture.
?3 Cut the potatoes into thin strips.
?4Wash the potato shreds several times with water.
?5 Chop the ginger and garlic into small pieces, cut the chives into small pieces, and then break each section into two pieces.
?6 Add enough water to the pot, add appropriate amount of salt and balsamic vinegar, and bring to a boil over high heat.
?7 Add the potato shreds with excess water removed, spread them with chopsticks and heat evenly, bring to a boil again and then turn off the heat.
?8 Quickly pour the shredded potatoes into the filter and rinse with cold water to cool down, then pour it into cold boiled water and rinse again to avoid ingesting raw water.
?9 Heat the pot, add homemade spicy red oil and heat until 70% hot.
?10 Pour in the minced ginger and garlic and sauté until fragrant, then turn off the heat.
?11 Pour the sauteed ginger and garlic ingredients into the potato shreds that have been drained of moisture, and add an appropriate amount of light soy sauce, balsamic vinegar, and chive segments.
?12 Stir evenly.

How to make chili oil red? "If you don't have this chili oil, you can do this: heat the pot, pour in an appropriate amount of oil and a little sesame oil, add the peppercorns and fry over low heat, then remove the peppercorns, dried chili pepper segments and minced ginger and garlic.
Put it in a bowl, pour in the oil, and mix evenly while pouring. You need to add some salt when using the spicy oil to mix with shredded potatoes. My homemade spicy red oil contains salt, so I don’t add salt when mixing.
