Because those terraces are located on the ridge, the water supply is difficult and the harvest depends on the sky, so we can only grow dry land crops, such as corn (Liugu), peanuts, sweet potatoes and so on. Traditionally, six grains and six cakes were planted in the north of several ridges in Dongyang, completely retaining the original customs and eating habits of Dongyang.
liuliang cake is not extruded or put in a mold. Instead, it is "cuffed" (squeezed by both hands) or "baked" (cooked in an iron pot). Lingbei people also call the baked Liuliang cake "Kao (Kao)". Copying and baking need technology, and the "copying" of hands is not good, and lazy people are unwilling to "copy"; If the fire is too strong, it will burn; if the fire is too warm, it will take a long time. Only hardworking and virtuous mother-in-law will bake and bake Liugu cake, which is fragrant.
"Kao" means "Kao". In the pottery bowl and behind the noodles, grab a small dough, squeeze the dough with both hands suspended, and rotate the dough clockwise or counterclockwise, which is called "copying". The "Kao" Liugu cake with good technology has a uniform thickness, an arc-shaped edge and as thin as a cicada's wing. Pick up the cake and look at the bright place. Light can penetrate the whole cake, as transparent as Jingdezhen porcelain. The cake is like a yellow moon hanging in the sky. I later thought, isn't it more appropriate to call Liugu cake moon cake? Six-grain cakes with poor workmanship have irregular edges and uneven thickness, and some of them have become thick dough, like "thick soup cakes" (thick six-grain paste cakes), and they have no appetite at first glance. Of course, there are also six-grain cakes squeezed out by wooden tools such as inverted pottery pots. Although the shape is similar to that copied by the master, the taste is far from perfect.
Kao's good six-grain cake is still raw, so you can't enjoy it right away. The next key process is "baking". The baked six-grain cake is exquisite, well baked and fragrant, with no spots on the surface; Half of the roast is raw, half is brown and half is bitter. Pine needles on the rocks in Chaoyang Mountain are used to bake six-grain cakes (this was mentioned in the "Xishan Foot Rope Powder" earlier). Masson pine is everywhere on the mountain of Lingbei. There are many pine needles, and a steak is a bamboo basket. Pine needles on rocks have strong firepower, strong fire and easy temperature control. Six-grain cakes baked with this pine needle are easy to loosen, but not easy to burn. After baking, put the fried shredded radish or soaked tofu in the middle while it is hot, and close half of it. Just like a hamburger, it tastes only one word: absolutely! So it is not impossible for some people to call Lingbei Liugu cake Lingbei hamburger. Of course, there is another way to eat. When it is hot, apply a thin layer of cooked lard, whether it is "snow" or "slope". The cooked lard suddenly penetrated into the six-grain cake, which was beautiful.
