How to pickle osmanthus fish
Pickling osmanthus fish requires first preparing osmanthus fish, salt, stones and plastic wrap, as shown in the following figure:

Preparation materials: mandarin fish, salt, stone and plastic wrap.

1. Clean the mandarin fish, as shown in the figure below.

2. Cut the back of Siniperca chuatsi with a knife, as shown in the figure below.

3. Add salt to the empty bowl as shown below.

4. Rub salt on the surface of mandarin fish, as shown in the figure below.

5. Put the salted mandarin fish in a bowl and put some big stones on it, as shown in the figure below.

6. Cover with plastic wrap and marinate for one week, as shown below.

7. As shown in the figure below, the sweet-scented osmanthus fish is marinated.
