Ingredients for making pig skin stewed radish: 200 grams of pig skin and half a white radish.
Accessories: 1 onion, 4 slices of ginger, 2 cloves of garlic, 5 peppercorns, 1 aniseed, 1 bay leaf, 1 tsp of sugar, appropriate amount of dark soy sauce.
1. Scrape off the pig hair and fat on the pig skin, wash it, and cut it into two-finger-wide strips.
2. Peel the white radish and cut into hob cubes.
3. Cut the green onion into pieces, smash the garlic and slice the ginger.
4. Pour the cold water into the pot for the pork rinds, pour in the cooking wine to remove the fishy smell and boil for 5 minutes to drain and control the water.
5. Add the peppercorns, aniseed, and bay leaves to the hot pot with cold oil and stir-fry until fragrant.
6. Add onions, ginger and garlic and stir-fry until fragrant.
7. Pour in the pork skin, dark soy sauce, and dried chili pepper and stir-fry until the pork skin turns color.
8. Pour in boiling water and bring to a boil over high heat. Add cooking wine and reduce to medium to low heat and simmer for 15 minutes.
9. Pour the white radish into the pig skin, add sugar and salt to taste, and cover until the radish is soft.
