The simple way to make homemade five-nut mooncakes is as follows:
1. 120 grams of peanuts and 100 grams of walnut kernels. Bake in the oven at 180°C for 8 minutes, cool and then peel. Crush again. Mix 60 grams of black sesame seeds and white sesame seeds, and bake them in the oven for 5 to 8 minutes until they are cooked.
2. Pour 60 grams of flour and 50 grams of glutinous rice flour into the wok, stir-fry over low heat until slightly yellow, stir-fry until cooked and cool until ready.
3. Wash the fresh lemon with salt and baking soda, then remove the lemon peel, tear off the white film inside, and then cut into small dices. I used 30 grams here.
4. Prepare 80 grams of raisins and chop them slightly.
5. Pour peanut kernels, walnut kernels, black and white sesame seeds, raisins, lemon peel and 40 grams of white sugar together and mix evenly.
6. Stir 100 grams of moon cake syrup (maltose is also acceptable), 80 grams of corn oil, and 30 grams of water until completely emulsified.
7. Pour the mixed nuts and dried fruits into the stirred syrup water and mix evenly.
8. Then pour in the fried flour and glutinous rice flour, mix evenly, and our five-nut filling is ready.
9. Divide the filling into 45g pieces and shape into balls. These make exactly 16 stuffing balls and keep in the refrigerator until ready.
10. Make the mooncake skin below. To 168 grams of moon cake syrup, add 65 grams of corn oil and 5 grams of sour water, stir thoroughly.
11. Pour in 250 grams of ordinary flour, knead into dough, seal and rest for 1 to 2 hours.
12. Divide the dough into 30g pieces and roll into balls.
13. Flatten the dough, wrap it in the filling, wrap the filling tightly, and then roll it into a ball.
14. Place the dough in a baking pan, brush the surface with a layer of dry flour, and then use a mooncake mold to press out the pattern.
15. Spray a little water on the surface of the mooncakes and put them into the preheated oven. Bake at 180℃ for 10 minutes, then turn to 160℃ and bake for another 12 minutes before taking it out of the oven.
