Hunan and Hubei provinces, located in the south-central part of China, are one of the important grain producing areas and one of the most important agricultural areas in China. Steamed fish head with red pepper
Ingredients: fish head, chopped pepper, onion, ginger and garlic, cooking wine, salt, chicken essence, soy sauce, sugar and oil.
Clean the fish head, cut it into pieces, add cooking wine, salt and soy sauce and marinate for half an hour.
Chop onion, ginger and garlic for later use.
Cool the oil in a hot pan, add onion, ginger and garlic until fragrant, add chopped pepper and stir fry.

Add appropriate amount of water, cook until the fish head is cooked, and collect the juice.

Ingredients: chicken legs, peanuts, onion, ginger and garlic, coriander, pepper, salt, chicken essence, pepper powder, soy sauce, vinegar and oil.
Clean the chicken legs, add cooking wine, salt and ginger slices and marinate for half an hour.
Chop onion, ginger and garlic for later use, and chop coriander and pepper.
Put the chicken legs into the pot, add appropriate amount of water, cook until the chicken is cooked, then remove and cool.
Tear the cold chicken into strips, add salt, chicken essence, pepper and soy sauce and mix well.
