Preparations for the Spring Festival in Zhanhua probably start on the 8th of the twelfth lunar month. Everyone is filled with joy and celebration, and Zhanhua in our hometown is no exception.
During the Laba Festival, the first thing everyone thinks of is Laba garlic.
In our hometown, Laba garlic is always pickled in pots.
First peel and wash the garlic cloves, then cut off the lower roots with a knife, and gradually pour mature vinegar into the basin, then place the garlic cloves one by one, and finally fold a piece of gauze flat in half.
Spread it on the surface of the pot, then cover it with a cover pad (a sealing tool in rural areas) and it will be ready after a while.
On the day of Laba, we not only pickle Laba garlic, but also make our Zhanhua special delicacy - Laba noodles.
The method of making Laba noodles is relatively complicated. First, add salt, eggs, flour and water to knead the noodles. Then put the slightly dry noodles into a basin and seal for 15 minutes and knead again until the noodles are very smooth and delicate.
Then cut it into diamond-shaped pieces and gradually stretch it until it is 0.2 cm wide and 15 cm long.
Finally, cook it with boiling water, sprinkle with chopped fungus, dried tofu, and chopped shiitake mushrooms and it's done.
When I was a child, I had to put up Spring Festival couplets. My grandfather would first write them and then stick them on the door with corn paste.
Moreover, there is also the custom of sweeping dust in Xiaonian, so that every corner of the home is swept clean, making the house warm and comfortable.
After the Little New Year, New Year's Eve came in a blink of an eye. Every household opened the pickled Laba garlic. The garlic was as green as emeralds, and the vinegar was also tinged with a hint of spiciness. It was a perfect combination of color, fragrance and flavor.
Then it was time to make the New Year's Eve dinner. All 9 adults in our family started cooking together. Every dish was delicious, and paired with the Laba garlic that was full of color, flavor and flavor, it was a perfect match.
