Put the turtle into the boiling water in a pot. Boil the water to remove the blood foam, then take it out and cool it for later use

Add cooked rapeseed oil to the pot, add dried chili peppers, Sichuan peppercorns, small onions, and green onions. Stir-fry the garlic and ginger until fragrant, add the soft-shelled turtle, add soybean paste, oyster sauce, and cooking wine, stir-fry until fragrant and add an appropriate amount of water to cover the soft-shelled turtle. Add the eggs and simmer for 15 minutes. Start seasoning, add 3 grams each of MSG, chicken essence and pepper
