This soup base was originally used by me to make Chaoshan original soup powder, which is characterized by sweetness. It is also suitable for making other soup powders, but thick soup powders (such as fish meal) have to be adjusted on this basis. How to cook whole grain fish meal will be discussed later.

Method of base material of original soup:

1, half a pig bone and one chicken rack (peeled, degreased and buttock removed), soaked in clear water for 20 minutes, washed and changed with water 1-2 times. If time permits, the soaking time can be extended and the water can be changed several times. Boil water, sprinkle some materials if there are any, cook for 3 minutes on medium heat, then remove and wash for later use.

Put 25000 ml water and cold water of pig bones (and chicken rack) into a pot and cook for 3-4 hours with minimum fire. You can add half a catty of pig skin and cook together.

Storage method: keep it above 60 degrees with an electric heating barrel, or put it in the refrigerator after cooling.

Note: Later, the barrel bones of pigs were replaced by skulls. Although it is more troublesome to remove fishy smell, it is more cost-effective.
