There are two types of saozi noodles, one is Qishan saozi noodles, and the other is Fufeng saozi noodles. The first one is bright red in color and slightly spicy, and the second one is golden and sour. The two methods are roughly the same. Almost the same, the main difference is in the pickled vegetables. Qishan Saozi Noodles are mainly made from chive flowers and garlic sprouts, while Fufeng Saozi Noodles are mainly made from chopped green onions. In fact, there are many noodles in Shaanxi.
