Pulled fish is pasta.
Pulling fish, also known as picking the tip and pulling the stock, is one of the noodles that Shanxi people like to eat. It is convenient and quick to make, and the noodles are white and smooth, soft and chewy, which is a rare delicacy on the table of Shanxi people.
Shanxi people like to pick tips, especially Taiyuan and Yuci. In the streets and lanes of Taiyuan and Yuci, all kinds of tip-picking pavilions emerge one after another, and even two or three tip-picking pavilions can be opened in one street, and each has its own characteristics. Compared with the taste of Daoxiao Noodles, the tip picking is more vigorous and smooth. Pick up a chopstick and put it in your mouth, just like a small fish slinking around and then sneaking in.
If you want to make delicious tips, special tips-picking boards and iron chopsticks are indispensable, and you can also use bowls and chopsticks instead. A high-quality pick tip is a shape with a flat center and two sharp ends. When the noodles are separated from the iron plate, the chopstick head should stretch the noodles conveniently, and the chopstick tail should pull off the panel immediately. Only by mastering this trick can we make a bowl of delicious tips.
Legend about Picking Tips
According to Traditional Pasta, during the reign of Tang Zhenguan, there was a drought in Qinchuan for 8 miles, and Wei Zhi recommended Tian Shanyou, a monk in Mianshan, to pray for rain, which improved the drought. To this end, Li Shimin led the Manchu civil and military officials to Mianshan to make a vow, and his sister Bagu also accompanied him, and worshipped the Notre Dame of Wulong as a teacher to practice in Mianshan. One day, when Aunt Ba was cooking for an old woman, she made the noodles a little soft.
Seeing the boiling water in the pot, Aunt Ba used her quick wits to pick up a board, put the soft dough on the board, and tried to stir it into the boiling water pot with a chopstick. Unexpectedly, one noodle was set aside. When the bowl was cooked, the old woman felt very delicious after eating it and asked, "What's this called?" Aunt mistook "this" for "you" and blurted out, "Aunt." The old woman mistakenly heard it as "dialing shares", and since then there has been a face of "dialing shares".
Later, people called "noodles with chopsticks" as "picking stocks". Therefore, noodles are pointed at both ends, so they are also called "picking tips". People in Yuci, Qixian, Taiyuan and other places put the mixed noodles in a big bowl and use chopsticks to pick them. The noodles are fish-bellied, so they are also called "fish-picking".
