Leshan is full of water, and its famous food also has this feature. The most famous are Xiba tofu and Minjiang fish. Making tofu is inseparable from good water. Xiba is a small town near the Minjiang River in Leshan, with clean water, which is especially suitable for grinding bean curd. Xiba tofu has therefore become one of the famous foods in Sichuan. Visitors can taste the exquisite and delicious Xiba tofu in all restaurants in Leshan, especially in the ship dock where the three rivers meet. These restaurants can make hundreds of different dishes with tofu, and the menu is dazzling, which can be called a major landscape of domestic cuisine.
The Minjiang River, Qingyi River and Dadu River outside Leshan City are famous for their rich fresh fish since ancient times because of their fine sand and little pollution. Among them, Jiangtuan (scientific name Haliotis diversicolor) is the best fish in Danshui River. Jiang Tuan has no scales, few spines, round body and tender and plump meat, which is most suitable for steaming. Jiangtuan is often chosen as a dish for state banquets. If ordinary tourists want to taste the best fish, they need both money (the price is several hundred yuan per catty) and fate (fishermen can never catch it).
Dongpo elbow, a thousand-year-old cultural dish, is a traditional dish handed down by Su Dongpo, a famous writer and gourmet in the Northern Song Dynasty. It has the characteristics of fat but not greasy, not rotten and not rotten. It has good color, fragrance, taste and shape. Some people call it a "gourmet" and foreign guests praise it as "a world famous dish".
