1. Mutton noodles. The most representative product of Yinchuan local noodles is one of the main noodles in many noodle restaurants. The most representative ones are the mutton noodles made by Yulian Noodle House, Hong Yuanshuai Noodle House, Huabiao Noodle House, and Furen Noodle House. Many families also make them. I often make my own mutton noodles.
2. Spicy fried lamb. Ningxia's spicy fried lamb generally chooses lambs no more than 20 kilograms. When cooking Huangquqiao lamb, it is mainly based on "explosion" and uses both "stew" and "braising" techniques. Stir-fry over high heat to allow the aroma to penetrate into the meat, making the dishes fresh, tender, fragrant and full of local characteristics and ethnic flavor. In 2017, in the first batch of representative lists of autonomous region-level intangible cultural heritages declared by our district, Pingluo County’s Huangquqiao lamb meat making technology was listed as autonomous region-level intangible cultural heritage.
3. Yellow River catfish. It is a specialty of Ningxia. "The Yellow River in the world enriches Ningxia". The water of the Yellow River is stable and slow in Ningxia, forming a unique aquatic resource. The Yellow River catfish is one of the most famous fish. The most honest cooking technique of Northwest people, stew large pieces of Yellow River catfish into a rich and delicious soup with tender meat.
4. Hand-caught mutton. Hand-caught mutton is a representative dish in Ningxia. Hand-caught mutton has almost become a masterpiece of Hui food culture. The selection of ingredients for hand-caught mutton is very particular. Lamb rib meat should be selected as the raw material, with a moderate proportion of beef and lean meat, and various stew seasonings should be added to cook it. The characteristic is that the meat is delicious, not greasy or tangy, and has both color and aroma. When eating meat, you grab and tear it with your hands, hence the name hand-caught mutton.
5. Braised snacks. Braised snacks are a traditional and famous snack that can be made in various parts of Ningxia. The thick mutton soup is stewed with mutton balls, splints, vermicelli, jelly, etc. I especially like to eat the splints in the soup. It is a snack fried with meat fillings sandwiched in dough. It is very delicious.
6. Haggis. The most famous folk delicacy in Yinchuan, this is one of the most beloved breakfasts of generations of Yinchuan people. You can see it in every famous haggis shop early in the morning. Everyone is eating fennel cakes, drinking haggis soup, and devouring sheep tripe intestines, noodles, lungs, and sheep hearts and livers.
