Production method:

1. Cut the lean meat from the pig bones and chop the spine directly.

2. Soak snails in clean water for 1 hour to remove sediment and earthy smell, and then wash them again.

3. 7. Boil the soup with snail meat 1 hour, and then put the Chili oil prepared in advance into the pot (you don't need to add it if you don't like spicy food).

8. Boil another half pot of water and add salt to the water (stir well and taste the salty taste). When the water boils, blanch the rice flour in the water, then pick it up, add the prepared ingredients, and finally add the snail soup and snail powder.

4. No attachments are allowed. After the snail powder is mixed, sour bamboo shoots, sauerkraut, fried peanuts, dried radish and chopped green onion can be added.

5. Dry-cut powder made of old rice, with a cross-sectional diameter of about 3 mm, should be soaked in water 1 hour in advance, and cold water should be used, otherwise the powder will break after being cooked and have no elasticity.
