1. For steamed glutinous rice or dumplings, I prefer round glutinous rice, the taste and viscosity are just right, and glutinous rice is difficult to cook, so it needs to be soaked for one night in advance, which can shorten the cooking time.
2. There are two methods for steaming glutinous rice, which we will introduce in turn.
Method 1
1) After the glutinous rice is soaked, take a high-temperature resistant container, which must be covered with a layer of oil paper to prevent sticking. Put some soaked red dates cut in half on the bottom of the container. After laying, put a layer of glutinous rice on it, compact the glutinous rice, then put a layer of brown sugar, and then continue to put other dried fruits or nuts. Each layer should be covered with a layer of glutinous rice and compacted, so that the final shape is compact, beautiful and not easy to scatter. Glutinous rice will swell after steaming, so it is enough to add it to the container for 8 minutes. The bottom red dates must be placed upside down, so that the finished products will be very beautiful when they are reversed.
2) Prepare a large pot, put more cold water in the pot, and the amount of water must be enough. The glutinous rice should be directly steamed in the pot for at least 1.5 hours, or directly put in a pressure cooker. Of course, it should be boiled and pressed for 1 hour on the premise of ensuring the amount of water.
This method seems simple and convenient, and it is very lazy. The only drawback is that you can't control the time well and take it out before steaming, which will be awkward.
Method 2
1) After the same glutinous rice is soaked, we steam it in a pot, spread a layer of steamer paper in the steamer, spread the glutinous rice evenly on it, and steam it in cold water for 4 minutes.
2) After steaming, take out the glutinous rice, prepare some containers, just grease them directly, spread red dates and raisins as decorations at the bottom, then put the glutinous rice in, compact it, and then add brown sugar. The specific operation steps are similar to the first method, the only difference is that after compacting all the glutinous rice, no extra water is needed.
