Tumote Zuoqi cuisine includes Mongolian hand-made meat, Hui baked meat, milk skin, Mongolian cheese, Mongolian milk tea and so on.
1. Mongolian hand-held meat: as the name implies, it is mutton by hand. Dismantle the mutton with bones according to the joints, put it in a large pot without salt and other seasonings, and cook it with raw juice. When eating, grab the sheep bone with one hand and pick it with the Mongolian knife with the other. Guests should not choose their own food at will. The host will choose mutton in different parts depending on the age of the guest.
2. Hui baked dumplings: Baked dumplings are a unique snack in Hohhot and a famous pastry product of Hui nationality. There are white roasted seeds, salty roasted seeds and sweet roasted seeds. Shapes are round, square, triangular, cow tongue-shaped and so on. Baked seeds are made by fermenting wheat flour and baking with alkali. It's crisp outside and soft inside, and has a strong smell of wheat flour. It is the most extensive and frequent mainstream food in breakfast.
3. Milk skin: Milk skin is made of milk. Put fresh milk in a basin, and after two or three days, a thick layer of milk skin will form on it. Fold this layer of milk skin into two layers, remove it, and put sugar in it, which tastes very sweet. Milk skins are mostly used for feeding relatives and friends and respecting the elderly on holidays. The milk used to make milk skins is the most ideal in autumn, because at this time, dairy cows have the fattest fat and the richest milk oil.
4. Mongolian cheese: cheese, commonly known as buttered egg, is a kind of milk food that Mongolian residents like very much. Cheese can be divided into raw cheese and cooked cheese. The way to make raw cheese is to pour fresh milk into a barrel, stir and extract cream, and then put the pure milk in a hot place to ferment it. When the fresh milk is sour, pour it into the pot and boil it. When the yogurt takes the shape of tofu, scoop it into gauze and squeeze it to remove water.
5. Mongolian milk tea: Mongolians mainly live in Inner Mongolia Autonomous Region and some neighboring provinces and districts. Mongolian herders mainly eat cattle, mutton and dairy products, supplemented by grain and vegetables. Brick tea is an indispensable drink for herders. Drinking salty milk tea cooked from brick tea is a traditional tea drinking custom of Mongolian people.
