1. Pulping: Wash the indica rice, soak it in clear water for 10 hour, drain the water, mix it with the indica rice and clear water, grind it into rice slurry with a stone mill, then add yeast slurry and stir for fermentation (summer 10 hour, winter 20 hours). After fermentation, soda and sugar are added and mixed evenly to obtain cake paste.
2. Steaming: put a square wooden frame in the cage, put a piece of wet gauze on it, pour in half of the cake paste, and steam for 20 minutes with high fire. After coming out of the cage, let it cool a little and cut it into diamond-shaped pieces.
