1. Buy a fresh chicken rack, wash it and cut it. Remove the unnecessary part with a knife, split it and pat it flat. Prepare the required materials: onion, ginger, cooking wine, soy sauce, oyster sauce, cumin, allspice powder, Chili noodles, salt, monosodium glutamate (you don't need to add it), sesame, potato starch (100g), flour (100g) and an egg.
2. Spread all the above materials except starch, flour and eggs evenly on the chicken rack. It is best to crush onions and ginger to get juice. Marinate for at least 3 hours, the longer the time, the better the chicken rack. Note that adding cooking wine can remove the fishy smell of chicken rack.
3. Stir the flour, potato starch and eggs evenly (a little water can be added). Stir until it is thick, put it into a marinated chicken rack and let the batter be evenly wrapped on the chicken rack.
4. Boil the oil in the pot. When the oil temperature is 5-60%, put it in a chicken rack and fry it slowly for about 3-5 minutes, then take it out and control it to dry. Wait until the oil temperature rises to 8-90%, then put it in the chicken rack and fry it again. Then take it out, sprinkle with sesame seeds, Chili noodles, cumin powder and other seasonings, or brush it with your favorite sauce to eat. Note that in order to get a crisp taste, the process of re-frying cannot be omitted.
