Steps
1. Milk powder Make it ready, wait for it to cool, then add it to the pot, add matcha powder, caster sugar, salt, egg yolk and heat, stir over low heat until boiling, then add all 250ml of animal cream, turn off the heat and wait for cooling.
2. After cooling, put it in the refrigerator and freeze it. Take it out and stir it every hour. If you have a stirrer, turn it on high power. If not, you will have to work hard on your arms. This is the state of stirring for the first time.
3. When I took it out for two hours and stirred it for the second time, ice crystals appeared on the surface.
4. Stir it for the fourth time and it’s ready. Try it one last time for the taste~
5. Stir it for the fifth time and it’s at its best! The texture is very soft and delicious, not inferior to the big-name ice cream sold outside. Once it's done, just put it in the refrigerator and freeze it for later use.
6. Start making the chocolate crispy crust on the outside. It is recommended to choose dark chocolate that is bitter, which is very suitable for making ice cream. Heat over water, add butter and stir until melted, then add appropriate amount of animal butter.
7. Stir until the chocolate sauce is smooth
8. Pour the chocolate sauce into the mold. The method I use is to fill it up and then pour it out. Repeat this several times until the mold is on the wall. Cover with a not too thin layer of chocolate sauce
9. Place in the refrigerator to freeze into a crispy crust.
10. Place the prepared matcha ice cream in the crispy crust, do not fill it up.
11. Cover the top with a layer of chocolate sauce, smooth it out, and place it in the refrigerator to continue freezing.
12. It will be ready to eat in just over half an hour!
Tips
1. Matcha powder is sold everywhere, and the taste of Uji brand matcha ice cream is similar to that of Nestlé’s matcha ice cream;
2. You can make crispy ice cream while freezing the ice cream, saving time;
3. The method is also applicable to crispy ice cream
